I thought that I would share a recipe for tzatzike. This is a great spread for sandwiches and also a good dip.
8 oz Greek yogurt
1tablespoon minced garlic
1 cup grated cucumbers
The juice of half a lemon
1/2 tablespoon olive oil
Mix all ingredients in mixing bowl. This is now ready to be served as a dip or spread on a sandwich.
You can also add a 1/2 cup pureed roasted red bell pepper for a twist. Or for a more smokey flavor add 1 pureed chipotle pepper.
